Exquisite scallops with smoked garlic

For the most wonderful starter melt a little butter in a pan, add chopped spring onions and finely chopped cold smoked garlic and cook until soft. Season with a little salt and freshly ground black pepper.  Add some Queenies and cook for 2 minutes turning frequently. Pour in a large dash of white wine stir for 30 seconds and serve hot with a chunk of of freshly baked brown bread and butter. Simple is best!
Or, course, you can use smoked scallops… not too heavily smoked!
