Smoked egg and tomato vegetarian recipe for Kendal’s Meeting House Cafe

 This is a recipe card I did for the recent relaunch of the Meeting House Cafe at the Quaker Tapestry in Kendal.

 EGG TOADSTOOLS

… or at least that is what I have always called them, but for this I have looked up the recipe and find they should be called “Mock Mushrooms”!

 When my Mother died ten years ago recipe books were among the things my sister’s and I sorted through. One of them was la Cucina in Minuti – Italian dishes ready in 10, 20 and 30 minutes. But it was the picture on the front that took me back to our kitchen in Tonbridge. I’m not even sure my Mother ever made Mock Mushrooms but I do regularly now. The simple combination of egg and tomato is so good…

The Recipe… (not rocket science!)

 4 eggs, 2 tomatoes, Mayonnaise, Parsley, Seasoning

 Hard boil and shell eggs. Flatten by slicing off the tips.

 Spread mayonnaise on a serving dish, sprinkle with parsley and stand eggs upright.

Halve tomatoes, sprinkle cut side with salt and pepper and pierce with cocktail stick.

Use the other end of the stick to secure each tomato to an egg, and then dot the tops with more mayonnaise.

I suspect I have never read the recipe before… The only improvement I would suggest is of course using smoked eggs!

This omnivore looks forward to sampling more fabulous vegetarian food at the new Meeting House Cafe.
