Just to say many thanks for the most wonderful day I spent with you both on the smoking course on the 26th September.
I am sending some photos of the smoker I have made, model 1 was just the gas cylinder but it got too hot, so I have made an oak smoking box on top and find this is working very well.
Have smoked trout, salmon steaks, cashew nuts, venison sausages, cheese (the first lot nearly melted but after a day in fridge was fine). We are sending two Gloucester old spots to be killed this week and I am going to cure and salt the legs – fingers crossed. Looking forward to the start of our first shoot on the 19th November and hope to smoke some pheasants breasts.

[I am now a smokers widow and every time I shop I am looking for food to smoke, I have bought a mackerel to try and 2 salmon sides. John is in charge of the starter for christmas.]
