DIY Smoked Jarlsberg cheese and other delights…

Well we are getting into the swing of things now.  Tomorrow we are running our second food smoking course of the season.  Hopefully the weather will be as good as it has been today.  Pretty perfect for smoking, warm(ish) dry and not too much wind.  Tomorrow we will be smoking a great selection of food including prawns, scallops and mussels.  Yum! We have been thinking today about the types of cheeses that are good to smoke.  My favourite is smoked Jarlsberg, I love the sweetness with the smoke combined with its chewy texture. A great recipe is to slice Conference pears and put them on home made brown bread, grate smoked Jarlsberg over the top and pop it under the grill for a few minutes  – delicious! Oh well – off to light up  ‘Freddie 2’  to cold smoke some cheese and garlic for tomorrow.  Happy Smoking!
