Sri Lanka and food…

A quick update… Now with pictures!
We had an amazing visit to Cargill’s, thanks to Export Director Chandani. A wonderful welcome and an introduction to staff, managers and executives before being shown around the immaculate food “factory”. Just outside Colombo, it was in beautifully landscaped gardens most importantly (for us, at least) it contained two smokers! The smell of the wood shavings was slightly musty – it was mahogany and the smell of the smoke produced was wonderful. Not too strong,but quite distinctive…

And then we had tasters! Their smoked products included smoked chicken sausages, WONDERFUL smoked bacon and perfect hot smoked beef. They have a “finest” range, but all their meat products are created by chef Stephan and his team and they are good, very very good! The hot smoked beef was perfectly pink on the inside and had a crust of crushed peppercorns of rich sweetness…I apologise for imperfections (shouldn’t be any now, I’m back home at the kitchen table, cold…)  in this post, it is hard to see the screen in the Sri Lankan sun, and my Chaaya Colada with fresh coconut is calling….
