Smoky Jo showing how to cold smoke at the Cheshire Game Fair

When the CLA Game Fair was cancelled earlier this year it threw our marketing strategy (“let’s do two shows”) into disarray!  However we managed to get a stand at the bank holiday weekend’s Cheshire Game and Country Fair, and we loved it.  We are looking forward to meeting those who booked courses (most keen to go to The Wild Boar Christmas food smoking day!) and hope that those who invested in smokers enjoy creating feasts… if you need guidance on getting the most from your home smoker, or are looking for recipe suggestions our book is available online.

The low point of the show was arriving on Sunday morning finding our stand under 6 inches of water – but we weren’t the worst affected so got stuck in and got on with drying out all our marketing leaflets… we were cheered up by having Johnny Gillet, The Journeyman next door to us, regaling wrapt children (and us) with stories of dragons and vikings…

The other high point was sampling the finest oak-smoked pancetta I have EVER tasted.  Perfick Pork from Norfolk were in the food hall selling sausages.  Spotting our smoke stand David brought us a dish of freshly fried smoked bacon and their oak-smoked pancetta… the bacon was first class, but the pancetta was out of this world!  I’m all for home-smoking, but I will be mail ordering some of that – I’m not competing with a cure that’s been 30 years in the perfecting…  now I’m really hungry….
